This sandwich you guys. It’s so good. I’m not a big lunch person but lately I have been eating avocado on toast every single day. Last month I started thinking what else I could add to this and experimented and just put this sandwich together randomly with things from my fridge and the results were perfection. I am also on a runny eggs kick, I can’t get enough, it’s a problem. This is such an easy quick lunch, I find myself making it a few times a week. This sandwich doesn’t have a name though-what should we call it?
So here’s what you need!
-Two slices of bread (I use the fresh brick oven panini bread that I love from my local grocery store and have also used the pepperidge farm sourdough bread)
– 1 egg cooked but keep that yolk runny!
– 1/2 to 1 whole avocado sliced (depending on the size and how much you want!)
– a slice or two of turkey (I love Boars Head mesquite smoked or cracked pepper)
– a slice of white american cheese
– buffalo sauce
What I did-
I toasted my slices of bread the added the turkey and cheese, put the egg right on top, added my sliced avocado and then drizzled some buffalo sauce on top and put the other slice of bread on. Cut down the middle and oooo and ahhhh over all that runny yolk goodness (no you don’t do that? Just me? Ok). Again, like with most recipes, there are no limits-you can change anything. That’s the thing about cooking, you can do whatever you want. I think any hot sauce would do here. This combination is so perfect though, trust me!
